RECIPE | STUFFED BELL PEPPERS


Stuffed bell pepper are one of my favourite things to eat. They're perfect to eat for lunch, but also are filling enough to eat for dinner. I usually make mine with either couscous or bulgur. Both are very filling grains and go amazing with the bell pepper. In this post I will be sharing this easy recipe with you!



This recipe is based on 1,5 filled bell peppers. This usually is what I eat for dinner whenever I am home alone. 

The Ingredients (for 1,5 filled bell peppers)
100 grams of bulgur or couscous
2 bell peppers (I used a red and orange one)
30-40 grams of feta cheese
1/4 courgette 

The first thing I do is cook my bulgur or couscous. In this case I used bulgur. I put the 100 grams of bulgur in, and then put some kettle boiled water over it. I usually cover the bulgur with 1 cm of water above it. Then just follow the directions on the packaging of how to cook the bulgur. The bulgur I use, tells me to wait ten minutes, so that's the perfect time to start cutting up the vegetables.

First off I start with cutting the bell peppers. I cut the two bell peppers in half and clean them. I keep three of the four halfs and cut the last one into cubes. Then I rinse the courgette with some water and cut it into cubes too.


After cutting the bell pepper and the courgette in cubes, I usually check up on the bulgur. Usually it's cooked by now and all the water made the bulgur nice and moist. If there's still a bit water left, leave it with for a while. If not most of the water is gone, you can add the bell pepper and courgette cubes to your bulgur.

Cut the feta cheese into cubes too and add that to your bulgur. Stir the whole thing around so that everything gets mixed together. The feta cheese usually melts a bit because the bulgur is still a bit warm. Then grab yourself a tablespoon and start filling up those three halves of bell pepper.

That's it! I usually eat this bell peppers like this, but you can also put them in the oven for a little while. I have never done that, but I know that my parents like to put their filled bell peppers into the oven for 5-10 minutes on 180 to 200 degrees celsius.
